I just wanted to let you guys know about a fantastic Blog called wannabeTVChef, The man in question is a guy called Kev...He has worked in lots of top resturants all over the world, he is in my friends list - Just thought I would let you know, really interesting and handy for sharing tips or even asking him questions and he is very kind, he will get back to you with the answer -
